It tastes recognisably of almond—soft, sweet, and clean—rather than of neutral fat, and it shows as pale gold with a light viscosity. Chefs use it as a finishing oil for salads, roasted vegetables, grain bowls, and pastry brushes where the nut note is the point. Yields are lower and prices higher than for heavily processed oils because the press protects flavour instead of maximising every drop under heat. Buy dark glass, keep the bottle cool, and finish it within months of opening; delicate aromas fade and oxidise. Cloudiness can be normal in unrefined oils; varnish or crayon smells are not. Avoid hard deep frying—the oil’s virtue is perfume, not smoke-point bravado. Taste a drop before dressing a delicate dish; a stale cold-pressed oil will dominate for the wrong reasons.
