Almond oil is the liquid fat expressed from sweet almond kernels, sold for finishing dishes, gentle cooking, baking enrichment, and sometimes body-care formulas that sit beside the culinary bottle. Pressing or solvent processes free the monounsaturated-rich oil; cold-pressed styles keep more of the nut’s aroma, while refined styles are quieter and often more heat-tolerant. Fresh culinary oil smells faintly sweet and nutty, pours clear to pale gold, and leaves a soft almond aftertaste on greens or warm pastry rather than a greasy film. Poor oil smells of varnish, crayons, or old fried fat, or tastes harsh and empty. Buy small dark bottles, recap promptly, and keep them cool—light and heat strip quality quickly. Use aromatic oils for salads, vegetable finishes, and pastry brushes; use milder refined oil when you need fat without perfume. Aggressive deep frying is a poor fit for delicate nut oils and dulls the flavour that made the bottle worth buying. Label and handle as a tree-nut product in shared kitchens. Quality is judged by aroma and clean mouthfeel, not by how hard you can heat it.
