Almond Extract
Almond extract is a concentrated bitter-almond aroma in alcohol or glycerin—the benzaldehyde note that reads as marzipan and cherry stone, not as toasted sweet-almond milk. A few drops scent a Bakewell, a sugar cookie, or a pastry cream; a teaspoon can taste of cough syrup and paint. Pure extract is made from bitter-almond oil or related food-safe sources; imitation is synthetic benzaldehyde, cheaper and flatter. It is not ground almonds, not almond milk, and not amaretto. Measure by the drop, and add it to the cool side of a batter so the alcohol does not flash off before the flavour lands. A good pure bottle smells round and nutty-cherry; a harsh imitation smells only of solvent-sweet almond.
