Imitation Almond Extract

Imitation Almond Extract

C tier

Imitation almond extract is synthetic benzaldehyde in alcohol or glycerin: the same molecule that reads as almond, without the rounder companions of a true bitter-almond oil. It is cheaper, louder, and more likely to taste of paint if you pour. Grocery cakes have been built on it for decades. Use it when the budget is the brief and the batter is chocolate or spice that will hide the edges. Cut the dose versus a pure extract; imitation shouts sooner. It is still not amaretto and not ground nuts.
