Hard roe is the firm female egg sac of albacore—granular when cut, rich and marine. Salt-cure for a bottarga-style specialty, or slice and pan-fry gently. Quality depends on season and handling; only pristine roe is worth curing. Pat dry, salt, and air-dry if curing; grate over pasta when firm. Fresh hard roe can be crumbed and fried. Limited and seasonal—never a bulk commodity like canned tuna.
