Albacore roe is the egg mass from mature females—less famous than bottarga from mullet or tuna of other species, but usable when very fresh as a seasoned, pan-fried, or cured specialty. Texture is granular; flavour is marine and rich. Soft milt from males is a separate, creamier product. Cure lightly with salt, or fry gently; do not treat as a everyday retail staple—supply is seasonal and local. Confirm food-safety handling for raw or lightly cured roe.
