They carry residual meat and collagen without the heavy oil of some darker fish frames. Avoid long aggressive boils that cloud and bitter the stock. Roast lightly first for deeper flavour, then simmer 20–40 minutes. Strain and use for soups, risotto, and sauces. Discard any bones with off smells; tuna frames need the same freshness as fillets.
