Whole winkles are sold in shell, usually already boiled and cooled in their liquor or brine. The operculum (little door) is discarded when picking. Whole is the only common retail form. Keep refrigerated in their liquid and eat within a day or two. Provide pins or toothpicks. Reheat gently if serving warm—though cold is traditional.
