Sparkling

Sparkling wine traps carbon dioxide from fermentation (or, less often, carbonation) so the glass foams with persistent bubbles. Traditional method Champagne and peers age on lees for autolytic biscuit notes; tank-method Prosecco keeps fruit forward and fresher; ancestral pét-nat is cloudier and wilder. In the kitchen, sparkling wine lifts batters, deglazes shellfish pans, and finishes creamy sauces when you want acid plus gentle fizz—most bubbles vanish with heat, leaving wine character behind. Match dosage to use: brut and extra brut suit savoury cooking; demi-sec belongs with fruit and pastry. Open bottles go flat quickly—plan to cook with leftovers the same day. Never substitute sweet sparkling for dry stock reductions without tasting; residual sugar concentrates.
