Asti
Asti is aromatic sparkling wine from Moscato Bianco grown in Piedmont’s Asti hills, usually made by tank method so fermentation stops with natural residual sugar and moderate alcohol. The result is fragrant with orange blossom, peach, and grape must, gently foaming rather than aggressively dry. Asti DOCG and the related Moscato d’Asti (frizzante, lower pressure) share the grape and perfume but differ in intensity of sparkle and sweetness balance. In the kitchen, Asti partners fruit salads, light cakes, panna cotta, and spicy-sweet Asian dishes better than savoury reductions. Its sugar and perfume make it a dessert wine and a base for sorbets; heat will strip florals quickly, so add late or use chilled in uncooked preparations.
