Brut Nature
Brut Nature (also called zero dosage or pas dosé) is sparkling wine bottled with no sugar added after disgorgement, so residual sugar stays at natural trace levels—typically under 3 g/L under EU definitions. Without dosage to round edges, the wine shows base-wine character, acid, and lees influence with uncompromising dryness. Only well-ripened fruit and careful élevage avoid hard, green finishes. It is the most savoury sparkling category for pure seafood, caviar-style canapés, and mineral-driven aperitifs. Cooking uses mirror dry white wine: deglaze and reduce without fighting residual sugar, though extreme leanness may need butter or stock to soften sharp acidity in sauces.
