Demi-Sec
Demi-Sec is a medium-sweet sparkling dosage with roughly 32–50 g/L residual sugar under common EU scales—noticeably sweeter than sec and far sweeter than brut. The sugar softens acid and frames ripe fruit, making the style traditional with cakes, fruit tarts, and spicy food rather than oysters. Historical Champagne was often much sweeter; demi-sec preserves that dessert-leaning niche. Cook or pair demi-sec with peach desserts, fruit salads, foie gras, and mildly hot Asian dishes. Do not substitute it blindly for brut in savoury reductions—the sugar concentrates into sticky, candy-like sauces unless balanced with vinegar, citrus, or bitter elements.
