Lambrusco
Sparkling Lambrusco is the frothy Emilia-Romagna red (and occasional rosé) wine family—bottle or tank carbonation, bright cherry-berry fruit, and a finish that can be dry (secco) or softly sweet (amabile, dolce). Foam is lively rather than Champagne-fine; body stays light to medium so the glass stays food-friendly with rich pork and cheese. At the table it cuts fat on salumi, tortellini, and barbecue better than many heavier reds. In the kitchen a dry Lambrusco can deglaze sausage pans or steam mussels when you want red fruit without tannic weight; sweet versions belong with fruit desserts, not savoury reductions.
