Blanc de Noirs
Blanc de Noirs is white (or very pale) sparkling wine made from black grapes pressed gently so skins do not stain the juice deeply—typically Pinot Noir and Pinot Meunier in Champagne, or Pinot Noir alone elsewhere. The style shows more red-berry depth, body, and sometimes a faint copper tint compared with Blanc de Blancs, while remaining formally white sparkling. Lees ageing adds brioche over strawberry and cherry kernels. Use Blanc de Noirs with richer seafood, white meats, mushroom dishes, and mild cheeses that need more mid-palate weight. In the pan it stands up better than pure Chardonnay fizz to cream and roast juices; still choose dry dosage for savoury reductions.
