It adds visible flecks and a rustic crunch to cookies, coatings, crumbles, and hearty batters. Flavour is shea butter for food is mild and fatty; much global shea is cosmetic, but edible grades exist in regional cooking. Meal often keeps more skin and oil than refined flour, so it tastes fuller and darkens more in the oven. Toast meal in a dry pan to bloom aroma before folding into doughs. Useful wherever West African soups and frying fats, plus edible refined shea in some food industries. Storage: butter keeps cool and sealed; kernels are intermediate goods. Process notes: women-led traditional collection and butter processing remain culturally central. Specify edible vs cosmetic shea for kitchen use; not all retail shea is sold as food.
