Whole sea urchin is the live or intact spiny animal for cracking at the bar or on a boat. Spines protect a shell (test) full of five paired gonad lobes and bitter offal. Live urchins should show spine movement; dull, foul-smelling animals are past use. Cut the mouth side, drain, and scoop lobes carefully. Wear gloves. Whole service is theatre; yield is small relative to spine volume.
