Sea urchin roe (uni) is the cleaned gonad lobes—soft, creamy, and intensely marine. It is not fish egg roe in the caviar sense but is sold under the roe name in many markets. Colour and firmness signal diet and freshness more than absolute species. Keep refrigerated at the edge of freezing without ice crystals. Dress with almost nothing: rice, citrus zest, or brown butter. Discard any grey, watery, or ammonia-scented product.
