Sea Trout steak is a cross-cut portion through the body, often bone-in, for grilling or pan-searing. After time at sea the flesh is often pinker and richer than river trout, with a clean marine edge that still cooks faster than farmed salmon. Oil the surface, season simply, and pull while the centre stays moist. Dill, almond, lemon, or a light beurre blanc suit the cut.
