Shelled pistachio is kernel stock already removed from the hard shell—ready for cooking, garnish, and grinding without the party-shell ritual. Convenience is high; shelf life is shorter than sound in-shell lots if storage is warm or bright. Taste target is sweet- savoury with crisp-tender bite and clean green aroma free of paint. Industrial shelling and grading have already done the hard work. Ready for baklava, gelato paste, mortadella, and last-minute chopping. Vacuum packs help but still deserve cool, dark storage after opening. Check for shell shards before serving children. Broken pieces in a “whole kernel” bag are common in lower grades; re-sort if presentation matters. Compared with pre-ground meal, shelled stock lets you control the freshness of every grind.
