In-shell pistachio is the nut sold still in its hard case—often naturally split for easy hand-opening, the classic interactive snack. Shells slow oxygen when lots are sound and dry, helping kernels keep better than poorly stored shelled meats. Guests crack or pull open their own; bakers shell ahead for control. Flavour once opened should be sweet- savoury with crisp-tender green meat. Closed-shell percentages vary by cultivar and season. Store cool and dry; discard nuts with mould, wormholes, or a dusty rattle. Provide a bowl for shell waste. Red-dyed shells in older retail styles are cosmetic only—judge the kernel. Sound in-shell lots are the grocery default for snacking; pastry kitchens still prefer pre-shelled kernels for speed. Check a sample mid-bag for rancidity before a party.
