Shell
The pistachio shell is the hard, naturally splitting case around the kernel—the snack’s interactive packaging. At maturity many cultivars crack open along a suture, inviting hand-opening without tools; closed-shell nuts may be immature, tightly shut for processing reasons, or sorted for mechanical shelling. Shells are not food, but they define in-shell snack culture, dye traditions (red-dyed shells in older US retail), and waste streams after parties. Clean shells may be composted or used as craft/biomass material; keep grit out of grinders. Dye does not improve kernel quality—judge the meat, not the paint. Sound closed shells can still hide good kernels for industrial shelling. Provide bowls for shell waste so fragments never migrate into desserts. Shell hardness and split rate vary by cultivar and irrigation.
