Pistachio paste is a dense, finely ground concentrate of pistachio meats milled until oil and particles form a thick, spreadable mass prized by gelato makers and pastry chefs. Richer than flour because the fat stays in the grind, it carries both flavour and the green colour that defines premium pistachio desserts. Bright green pastes usually start from carefully blanched, high-quality kernels; dull brownish pastes often reveal older stock or heavy roasting. Soften stiff paste with syrup or a little warm milk before folding into foams so it does not seize. Quality paste smells clean and green-aromatic; oxidised paste smells like paint and should be discarded. Seal tightly, keep cool, and protect from light. This is the workhorse form behind French pistachio cream, Sicilian gelato, and Middle Eastern sweets that need pure flavour without chunky pieces.
