Whole Kernel
Whole pistachio kernels are complete, unbroken seed meats sold for garnish, snacking, and controlled chopping—the premium visual form on baklava, gelato, and rice dishes. Intact surfaces look jewel-like when green is vivid and purple skin accents remain. Flavour should be sweet-savoury with a crisp-tender bite and clean floral-nut aroma. Toast gently if desired, cool fully, then pack so residual heat does not soften the crunch. Reserve wholes for presentation; use pieces or meal when shape will disappear. Pick out yellowed or rancid kernels before service. Store cool and dark. Check for shell fragments after mechanical shelling. For pastes and butters, wholes are excellent raw material but not required if you already plan to grind cheaper broken grades of equal freshness.
