Split Kernel

Split pistachio kernels are halves or natural splits that expose more surface for roasting and coating while still reading as recognisable pistachio pieces. They distribute evenly through ice cream, cookies, and rice and toast a little faster than tightly whole meats. Flavour matches good whole stock when fresh—sweet-savoury with green aroma. Packers often route splits into mid-tier ingredient packs when perfect wholes command garnish prices. Use splits when even distribution matters more than jewel silhouette: granola, mortadella mix-ins, chopped baklava layers. Still inspect for shell grit and discard paint-scented pieces. Higher surface area means faster staling—keep cool and dark. Excellent roasting stock because salt and spice cling well to open faces.
