Pine-nut paste is a dense, oil-bound grind of pine-nut kernels milled until the mass holds together like a soft marzipan cousin. Richer than flour because fat stays in the grind, it carries resinous-sweet flavour into fillings, sauces, and specialty confections. Light toast before milling deepens pine perfume; rawer grinds stay paler and milder. The paste is highly perishable—treat it like fresh pesto base, not shelf-stable candy almond paste. Soften with a spoon of oil or warm water before folding into foams so it does not seize. Quality paste smells sweet and piney; oxidised paste smells like paint and must go. Seal tightly and refrigerate or freeze. Chefs use it when they want pine-nut body without visible seeds, or as a concentrated starter for large pesto batches when whole kernels will finish the texture.
