Whole Kernel
Whole pine-nut kernels are complete, unbroken seeds sold for pesto, garnish, and careful toasting—the premium visual form when you want intact ivory ovals or triangles on a plate. Intact surfaces look cleaner in pilafs and cookie tops than crumbs. Flavour should be sweet-resinous with a soft bite; colour should be ivory, not yellowed and greasy. Toast gently and cool fully so residual heat does not push oils toward bitterness. Reserve wholes for presentation and pesto where texture of whole seeds matters; use broken grades when grinding paste. Pick out dark or rancid pieces before service. Store frozen when possible. Check for shell fragments. Species still defines shape: Mediterranean pinoli look different from longer Korean-pine kernels even as “whole.”
