Roasted pine-nut kernels are dry-toasted meats taken only to a light gold so resinous sweetness blooms without bitterness. Maillard chemistry adds depth that raw kernels lack, which is why toasting is almost mandatory before many salads and some pestos. Salt is optional; watch the pan every few seconds—pine nuts burn notoriously fast. Cool completely on a plate so residual heat does not finish them into charcoal. Roasted pine nuts stale even faster than raw ones. Toast what you need, or freeze roasted surplus airtight. Quality roasted kernels smell toasty-pine and sweet; burnt or paint-like notes mean start over.
