Flour
Pine-nut flour is a fine, pale powder milled from dried shelled pine-nut kernels. It is not wheat: structure is weak, fat is very high, and batters need eggs, starches, or blends if they must hold shape. Fresh flour smells sweetly resinous and buttery; baked, it gives tender short crumbs with a soft pine perfume rather than a loud toast note. Because the starting kernels are so perishable, the flour is even more fragile—surface area multiplies rancidity risk. Use sparingly in gluten-free cookies, crusts, and specialty Mediterranean-leaning pastry. Sift before measuring and weigh for consistency. A good bag is free-flowing and clean- smelling; a bad bag reeks of paint or cardboard. Freeze immediately after opening. Mill only what you need if you start from frozen kernels at home—commercial flour should already be treated as a short-lived luxury ingredient, not a pantry bulk staple.
