Shelled pili nut is kernel stock of the rich seed of Canarium ovatum, iconic in the Philippines already removed from the hard shell for immediate cooking. Convenience is high; shelf life is shorter than sound in-shell lots if storage is warm. Taste target: buttery, delicate, and luxurious—often compared with a tropical macadamia. Ready for cooking such as Filipino sweets, brittle, ice cream, and premium exports. Industrial shelling already applied the species pathway: labour-intensive shelling; kernels fragile when fully refined for export. Storage discipline: freeze export kernels; oil softens and stales in heat. True pili differs from generic “tropical mixed nuts”; seek Philippine origin for classic flavour. Allergen: tree nut. In comparison, Philippine luxury nut alongside macadamia in richness. Check packs for shell shards before serving children. Vacuum packs help but still deserve cool storage after opening.
