Refined pili nut oil is processed to reduce colour, free fatty acids, and strong aroma from the rich seed of Canarium ovatum, iconic in the Philippines, yielding a milder fat. It suits warmer cooking and formulas that need fat without loud nut perfume. Flavour is quieter than cold-pressed styles while still deriving from very high oil content that shines when roasted. Use when neutral behaviour matters more than tasting-room aroma. Still an allergen-source oil: tree nut. Store sealed and cool; refinement helps stability but does not grant immortality. True pili differs from generic “tropical mixed nuts”; seek Philippine origin for classic flavour. Twentieth-century refining expanded shelf life for manufacturers. Taste before dressing a delicate salad—some refined oils are nearly silent. This is pure fat, not a protein food. Labels should distinguish refined from virgin or cold-pressed when flavour is the point.
