Split pili kernels are halves or pieces after the hard shell is removed, the form bakers chop for brittle and cookies when whole perfect kernels are too costly. Pili meats are fragile and oily. A good split is creamy-white and fresh. A bad split is yellow and paint-scented. Toast very lightly if at all. Freeze stock. Whole kernels win for gift packing; splits win for folding into batter.
