Salt after roasting if you want crystals to cling; season while still warm. Kitchen traditions include Filipino sweets, brittle, ice cream, and premium exports. Roasted nuts stale faster than raw ones: freeze export kernels; oil softens and stales in heat. True pili differs from generic “tropical mixed nuts”; seek Philippine origin for classic flavour.
