Blanched pili nut kernels have the brown pellicle loosened and removed with hot water or steam, leaving a pale seed from the rich seed of Canarium ovatum, iconic in the Philippines. Pale colour matters for fine pastes, white chocolates, and light European-style pastries. Flavour is cleaner and less tannic than skin-on stock while still showing buttery, delicate, and luxurious—often compared with a tropical macadamia. Blanching is used when labour-intensive shelling; kernels fragile when fully refined for export. Dry thoroughly after blanching so later frying or freezing does not sputter or ice. When visual delicacy counts. Storage: freeze export kernels; oil softens and stales in heat. True pili differs from generic “tropical mixed nuts”; seek Philippine origin for classic flavour.
