Skin
Pecan skin, or pellicle, is the thin brown coat on the kernel after shelling. It carries mild astringency and colour that deepens the nut’s maple-leaning richness. Most snack and pie uses leave the pellicle on; pale European-style pastes may want it reduced. The coat is edible and papery—nothing like the woody outer shell. Light rubbing after careful drying can loosen loose skins, but aggressive blanching is less common than with almonds. Skin-on halves look traditional on open-faced pies; heavy skin flecks can darken a pale butter. For fine pastes, sieve dust away from white icings. Fresh skins smell sweet like the meat; musty skins mean poor storage. Home kitchens usually leave them on and compost only what rubs off accidentally. Choosing skin-on versus cleaned is a colour and texture decision, not a safety shortcut.
