Pecan paste is a dense, finely ground concentrate of pecan meats milled until oil binds the particles into a thick, almost fudge-like mass. Richer than flour because the fat stays in the grind, it is the professional base for praline centres, ice-cream inclusions, and pastry fillings that need pecan flavour without chunky pieces. A pale paste starts from lighter meats; a deeper paste starts from roasted stock with more Maillard colour. Soften stiff paste with syrup, cream, or a spoon of warm water before folding into foams so it does not seize. Quality paste smells sweet-buttery; oxidised paste smells like paint and should be thrown out, not masked with sugar. Seal and refrigerate—surface fat turns first. Candy kitchens and Southern pastry shops treat this as the workhorse when body and pure pecan taste matter more than visible halves on top of a pie.
