Unbroken surfaces oxidise a little slower than fine pieces and look generous when laid in concentric rings on a pie. Flavour should be sweet-buttery with a tender crunch; colour should be light amber, not dark and oily-looking. Toast gently if desired, cool fully, then pack so residual heat does not soften the bite. Reserve halves for presentation; use pieces when shape will disappear into batter. Pick out damaged or rancid halves before service—one bad piece is memorable for the wrong reason. Store cool and sealed. Check for shell fragments after mechanical cracking. USDA Fancy halves command higher prices; do not grind them into butter unless the recipe truly needs the show quality.
