Blanched Kernel
Blanched pecan kernels have had loose pellicle reduced or removed for a cleaner colour in pale pastes and refined confectionery. Pecan blanching is less ubiquitous than almond blanching, but pastry kitchens still request skin-light meats when brown flecks would muddy a light buttercream or white-chocolate application. Flavour is slightly milder and less tannic while keeping the sweet-buttery core. Dry thoroughly after any wet step so later roasting or freezing does not sputter or ice. Watch colour carefully when toasting blanched meats—they scorch faster without the skin’s buffer. Good blanched stock is more uniform in colour; poor stock shows wet centres or old- oil smell. Store cool and sealed. Specify blanched only when colour control truly matters; traditional Southern pie culture usually prefers classic skin-on halves.
