Shucked oysters are meats removed from the shell, packed in their liquor in tubs for frying, stews, stuffing, and cooked dishes. They lack half-shell drama but speed high-volume cookery. Liquor should look reasonably clear and smell clean; cloudy, sour packs are past use. Drain lightly for frying so breading sticks; reserve liquor for chowders. Use within days of the pack date and keep ice-cold. Prefer shell-on for raw tasting menus where presentation and merroir matter.
