Oyster liquor is the clear, briny liquid that surrounds the meat in the shell or pack—part seawater, part oyster juices. It is a flavour base for chowders, pan sauces, and stews, and part of the tasting experience on the half-shell. Never discard good liquor when shucking for cooked dishes. Strain if sandy. Brief heating is fine in soups; long hard boils can turn it harsh. Sour or milky liquor from old oysters should not be used.
