Octopus tentacles are the eight arms—the main meat for grilling, braising, and slicing into salads. Suckers and purple skin can stay for appearance or be rubbed off after cooking. Properly tenderised tentacles slice into neat medallions with mild-sweet marine flavour. Char over high heat after simmering for Spanish-style pulpo, or continue in stews. Undercooked tentacles are rubbery; overcooked ones dry—stop when tender throughout.
