Head
Octopus head in kitchen language usually means the mantle and head region after cleaning—sometimes stuffed, sometimes sliced, sometimes used for stock. It holds more membrane and can be slightly softer than tentacles when cooked. Remove cavity contents, beak, and eyes before cooking. Stuff with breadcrumbs and herbs in Mediterranean recipes, or dice for stews. Some cooks prefer tentacles only and save the head for broth; both are edible when cleaned well.
