Mahi-mahi skin is tough and usually removed before service—it does not crisp into a delicate crackling like salmon skin and can chew rubbery. Some whole-fish grills leave skin on for protection then peel at the table. Scales are large relative to many reef fish. For fillets, skin off is the default.
