Cold-pressed macadamia oil is mechanically expressed at low temperature so soft buttery aroma survives the press. It tastes gently of the nut—creamy, mild, luxurious—unlike nearly silent refined oil. Excellent as a finishing oil and for moderate cooking thanks to high monounsaturated fat. Still treat open bottles with respect; oxidation wins if heat and light abuse them. Buy dark glass, recap promptly, and keep cool. Drizzle on salads, roast vegetables, or brush on pastry. Cloudiness can be normal in unrefined bottles; varnish smell is never normal. Do not confuse this flavour oil with fully neutral refined fat when aroma is the point. Discard rancid bottles rather than masking them with herbs.
