Peeled lotus tuber is the rhizome with brown skin removed, ready to slice into coins or sticks. Exposed flesh browns and dries quickly—hold in acidulated water and cook soon. Peeling thickly removes tough outer fibres. Use immediately for stir-fries, braises, and pickles. Pre-peeled packs must look white-beige, not grey.
