Split lentils are seeds halved and usually skinned—classic red and yellow masoor and moong-style market forms that cook in 15–25 minutes to a soft puree for dal, soups, and infant food. They do not hold shape like Puy or whole green lentils; that collapse is the point for thick, spoonable dishes. Rinse until water runs clearer, skim foam while simmering, and season with tempering spices (tadka) of cumin, garlic, chilli, or curry leaf. No soak required. Salt and acid near the end if you need maximum softness first.
