Lamb tenderloin is the small psoas muscle under the saddle—scarce, ultra-tender, expensive per kilo because yield is tiny. Treat like a miniature beef fillet: fast, hot, pink. Sear whole, rest, and slice into medallions; or flash-cook as tips for salads. Oil well; the surface needs help browning. Never braise for hours. Ideal for two when a whole loin roast is too much.
