Neck-end shoulder is the portion toward the neck—marbled, excellent for dice and mince, and for stews with plenty of body. Slightly more awkward bones if left in; superb flavour. Cube for curries and tagines; mince for kofta with a good fat ratio. Slow heat wins. This end loves bold spices—cumin, coriander, chilli, cinnamon. A favourite of cooks who prioritise taste over neat slices.
