Shelled hickory is kernel stock of nuts of Carya species native mainly to North America already removed from the hard shell for immediate cooking. Convenience is high; shelf life is shorter than sound in-shell lots if storage is warm. Taste target: sweet to bitter depending on species—shagbark is prized, bitternut is not a dessert nut. Ready for cooking such as foraged American baking, regional sweets, and wild-food cookery. Industrial shelling already applied the species pathway: species identification matters; crack hard shells; cure kernels. Storage discipline: freeze sweet hickory kernels; quality varies wildly by tree. Do not grind bitternut hickory for dessert paste; species choice is the recipe. Allergen: tree nut (walnut family). In comparison, wilder and less standardised than pecan commerce. Check packs for shell shards before serving children. Vacuum packs help but still deserve cool storage after opening.
