Roasted hickory kernels are heat-treated meats of nuts of Carya species native mainly to North America, dry- or oil-roasted to deepen aroma and crisp texture. Maillard chemistry turns the baseline of sweet to bitter depending on species—shagbark is prized, bitternut is not a dessert nut into a toastier snack and baking inclusion. Roasting can ease skin rub-off on species that slip their pellicles when hot. Cool completely before packing or residual heat steams the crunch away. Salt after roasting if you want crystals to cling; season while still warm. Kitchen traditions include foraged American baking, regional sweets, and wild-food cookery. Roasted nuts stale faster than raw ones: freeze sweet hickory kernels; quality varies wildly by tree. Do not grind bitternut hickory for dessert paste; species choice is the recipe.
