Blanched Kernel
Blanched hickory kernels have the brown pellicle loosened and removed with hot water or steam, leaving a pale seed from nuts of Carya species native mainly to North America. Pale colour matters for fine pastes, white chocolates, and light European-style pastries. Flavour is cleaner and less tannic than skin-on stock while still showing sweet to bitter depending on species—shagbark is prized, bitternut is not a dessert nut. Blanching is used when species identification matters; crack hard shells; cure kernels. Dry thoroughly after blanching so later frying or freezing does not sputter or ice. When visual delicacy counts. Storage: freeze sweet hickory kernels; quality varies wildly by tree. Do not grind bitternut hickory for dessert paste; species choice is the recipe. Allergen remains tree nut (walnut family). Blanched kernels scorch faster—watch colour, not only the timer. Blanching is not roasting; each step solves a different problem.
